Flax Seed Breaded Mozzarella Sticks

Flax Seed Breaded Mozzarella Sticks are some of the best appetizers I have made in a long time!!  I had some kids over the other day and they ate these up so quickly!   

REMINDER:  I do not use exact recipes and just like to put things together based on how like things to taste and estimate the ingredients I use based on how many servings I will prepare. 

I used my favorite ingredients and you can use yours to add or replace some of mine:
  • Fresh Mozzarella (shrink-wrapped packaged in deli: oblong size or ball)
  • Golden Milled (fine) Flax Seed
  • Garlic Powder
  • Herbal Seasoning or fresh chopped parsley
  • Egg Wash (I blended 1 whole egg & 3 egg whites)
  • Safflower Oil - for light frying (safflower oil is high in monounsaturated fat, so it is great for high heat and very healthy oil to use for cooking)
For a Dip: consider a can of chunky tomato soup!!

These are the steps I used to cook them:
  1. Blend eggs for egg wash in separate bowl large enough to dip mozzarlla sticks
  2. Cut mozzarella into finger sizes or french fry cuts
  3. Mix flax seed, herbs, garlic powder & a pinch of salt in separate bowl
  4. Heat oil on medium - I filled a very small saucepan/pot about a 1/4 of the way - enough to cook several pieces of mozzarella sticks
  5. Soak some mozzarella in egg wash
  6. Roll mozzarella in flax seed / herb mixture
  7. Once oil is hot enough, fry several mozzarella sticks for a couple minutes - turn over every minute
  8. It will cook fast and you do not want to overcook them!!
