Unfortunately, if you are not a cook and is someone that needs to follow exact recipes to cook, freestyle cooking might not be for you. I like to give pointers on what to cook and do not use recipes to cook because I just use my own discretion and how I like things flavored. Let me tell you about freestyle cooking. I cannot emphasize enough that it is so invigorating to cook with so many robust flavors that tantalize my taste-buds! Ask anyone who knows my cooking style and they will tell you that I do not like to follow recipes! My reason: recipes are created one way that may not appeal to my taste-buds. I do like to "refer" to recipes just to get an idea of what is in a certain dish, then I "re-create it" based on how I like - minus the globs of butter, high sodium and saturated fat! My husband and I always have the discussion about the mounds of butter that is used in gourmet cooking; we think of it as "cheating" or even to the point of "bribing". It is no wonder America's obesity rate is on the rise! I do admit, that I do cook with a tiny bit of butter every so often and a "tiny bit" means: 1-2 tsps. per dish. I usually cook with what I have in the fridge; I am not always running to the store each time I cook a meal because I am lacking a certain ingredient. Meal planning to a certain extent is necessary - for example: if you know that you are going to have chicken & fish for the week, buy the ingredients that you will know you will need for seasoning & accompanying with your dishes! Use fresh vegetables & herbs to enhance the flavors and quantify your dishes! Frankly, I think cooking should be simple because oftentimes, people that do not like to cook dislike it because it can get too complicated! For me, freestyle cooking is about using the senses that God had so graciously blessed me with. I love the fresh aromas of cooking, tasting my food and hearing the cool sounds that come with prepping & cooking the food - blending, chopping, sizzling, boiling and roasting, etc. I keep it simple, so I am not in the kitchen for hours or even all day! Freestyle cooking for me is also always the healthiest option!
I will always continue to defend that eating healthy is cheaper than eating out or buying pre-packaged (frozen foods). My husband & I also think of it this way...eating healthy will save us from expensive medical bills in the future (for treating conditions like: heart disease, Diabetes, etc. and purchasing medications that goes with treating all of these conditions). My advice: invest in your health now to save yourself from paying later! I just think about the cost of a bag of chips now...close to $4 in some stores...with $4 to $5, you can buy a dozen eggs, some herbs, and a couple vegetables to make an amazing egg-white fritatta that can even last you for days!
REMINDER: I do not use exact recipes and just like to put things together based on how like things to taste and estimate the ingredients I use based on how many servings I will prepare.
